The Black Forest Gateau gets its name, not as you might expect from the wooded mountain range in the South West Germany, but from the specialty liqueur from that region known as Schwarzwälder Kirsch, which is distilled from tart cherries. Typically, Black Forest cake consists of several layers of chocolate cake, with whipped cream and cherries between each layer.
